According to Serious Eats, a simple knife technique, however, can help fix that imbalance before the fish ever hits the pan.

The challenge comes from the natural shape of fish fillets. Cuts like salmon taper from a thick center toward a thinner tail, and they can also include delicate belly sections that cook much faster than the rest of the fish. While that variation is natural, it makes consistent cooking difficult when everything goes into the pan at once.

The solution is a quick adjustment that reshapes the fillet for more even cooking. The method involves lightly scoring the thinner portion of the fish and folding it underneath itself. This effectively doubles the thickness of the leanest section, helping it cook at a rate closer to the rest of the fillet.

This technique works well for salmon, where thinner belly flaps are common. Although those sections are naturally fattier and can stay moist even when fully cooked, folding them neatly helps the fillet cook more evenly and look more polished on the plate.

However, the method is not ideal for skin-on fish. Folding can trap moisture between layers of skin, creating an unwanted steamed texture inside the fillet. In most cases, this technique is best reserved for skinless cuts where even cooking and clean presentation are the priority.
