Easy Bran Muffins: To Add Raisins Or Not

The humble bran muffin has sparked a surprisingly passionate kitchen debate.

Some swear a handful of sweet, juicy raisins is what makes a bran muffin complete, while others would rather leave them out entirely and let the nutty flavour of the bran shine.

Whichever side you’re on, one thing is certain: Bran muffins are an affordable, wholesome bake that’s perfect for breakfast, lunchboxes or an afternoon tea break.

The best part? This recipe works beautifully with or without raisins, so everyone at the table can enjoy them their way.

Easy bran muffins (with or without raisins)

Makes: 12 muffins

Preparation time: 15 minutes

Cooking time: 20-25 minutes

Ingredients

2 cups wheat bran

1½ cups cake flour

½ cup brown sugar

2 teaspoons baking powder

1 tsp bicarbonate of soda

½ tsp salt

2 eggs

1 cup buttermilk (or plain yoghurt)

1/3 cup sunflower or canola oil

1 tsp vanilla essence

1 cup raisins (optional)

Method

Preheat the oven to 180°C and line or grease a 12-hole muffin tin.

In a large bowl, combine the bran, flour, brown sugar, baking powder, bicarbonate of soda and salt.

In a separate bowl, whisk together the eggs, buttermilk, oil and vanilla.

Pour the wet ingredients into the dry ingredients and gently fold until just combined. Avoid overmixing as this can make the muffins dense.

If using raisins, fold them into the batter.

Divide the mixture evenly between the muffin cups, filling each about three-quarters full.

Bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean.

Allow the muffins to cool for five minutes before transferring them to a wire rack.

Team raisins or team plain?

Adding raisins brings natural sweetness and bursts of chewy texture that pair beautifully with the earthy bran. They’re especially delicious when served warm with butter.

If raisins aren’t your thing, the plain version is just as satisfying.
